  • 2 lbs boneless skinless chicken thighs, cut into bite-sized pieces
  • 6 cups chicken broth (low sodium preferred)
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup frozen sweet corn kernels
  • 1 cup frozen cut green beans
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 1 cup whole milk
  • 4 tablespoons unsalted butter, melted
  • 1 cup heavy cream or half & half
  • 1 cup sharp cheddar cheese, shredded
  • 2 teaspoons fresh thyme leaves or 1 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cut chicken thighs into 1-inch bite-sized pieces. Dice onion and mince garlic.
  2. Heat a large pot over medium heat and add a splash of oil or butter. Sauté onion and garlic until fragrant and translucent, about 3-4 minutes.
  3. Add chicken pieces and cook for 4-5 minutes until lightly browned.
  4. Pour in chicken broth and bring to a gentle simmer. Cook uncovered for 15 minutes to tenderize chicken and infuse flavors.
  5. In a mixing bowl, combine flour, baking powder, and salt. Stir in milk and melted butter until just combined; do not overmix.
  6. Add frozen corn and green beans to the simmering broth. Drop dumpling batter by heaping tablespoons onto the surface of the broth.
  7. Cover pot tightly and cook dumplings for 12-15 minutes without lifting the lid.
  8. Remove lid and stir in heavy cream, shredded cheddar cheese, and thyme. Simmer for another 3-5 minutes until cheese melts and broth is creamy.
  9. Taste and adjust salt and pepper as needed. Serve warm immediately.

Notes

Do not overmix dumpling batter to keep dumplings tender. Keep pot covered while dumplings cook to trap steam. Use freshly shredded cheddar cheese for best melt and flavor. Adjust salt at the end due to varying broth saltiness. For lighter or dairy-free versions, substitute heavy cream with coconut milk and use gluten-free flour if needed. Leftovers thicken; add broth or milk when reheating.
