A rich, creamy, and smoky cheese dip with chorizo, perfect for parties and quick gatherings. This recipe balances melty cheeses with a smoky chorizo twist and a secret touch of cream cheese for ultra-smooth texture.

  • 8 ounces chorizo, casing removed and crumbled
  • 2 cups Monterey Jack cheese, shredded
  • 1 cup white cheddar cheese, shredded
  • 4 ounces cream cheese, softened
  • 1 small jalapeño, finely diced (optional)
  • 1 can (4 ounces) diced green chilies
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • ½ cup whole milk
  • 1 tablespoon olive oil or butter
  • Small handful cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. Heat 1 tablespoon of olive oil or butter in a medium skillet over medium heat. Add the crumbled chorizo and cook for about 5-6 minutes until browned and cooked through, breaking it up with a spoon as it cooks. Drain excess fat if necessary.
  2. Add the finely chopped onion and minced garlic to the same skillet. Cook for about 2-3 minutes until softened and fragrant, stirring occasionally.
  3. Stir in the diced jalapeño (if using) and canned green chilies. Cook for another 1-2 minutes to meld the flavors.
  4. In a separate bowl, combine the shredded Monterey Jack, white cheddar, and softened cream cheese. Stir until well blended and creamy.
  5. Reduce heat to low. Slowly add the cheese mixture and ½ cup milk to the skillet with the chorizo and veggies. Stir gently but constantly as the cheese melts and the mixture becomes smooth and creamy, about 5 minutes.
  6. Taste and season with salt and pepper as needed. Remove from heat once the cheese is melted and the dip is thick and luscious.
  7. Sprinkle chopped fresh cilantro on top. Serve immediately with tortilla chips, warm pita, or fresh veggies for dipping.

Notes

Use freshly shredded cheese for best melting results. Cook cheese mixture on low heat to avoid grainy or oily texture. Drain excess chorizo fat to prevent runny dip. If queso gets too thick, add a splash more milk to loosen. Can prep chorizo and aromatics ahead and add cheese just before serving.
