  • 1/2 cup BBQ sauce (plus extra for topping)
  • 1/2 cup breadcrumbs (plain or seasoned)
  • 1 large egg, room temperature
  • 1/2 cup shredded cheddar cheese
  • 2 stalks green onions, thinly sliced
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon smoked paprika

Instructions

  1. Preheat your oven to 375°F (190°C). Grease your muffin tin lightly with cooking spray or oil to prevent sticking.
  2. In a large mixing bowl, combine the ground beef, breadcrumbs, egg, 1/2 cup BBQ sauce, Worcestershire sauce, garlic powder, onion powder, smoked paprika (if using), salt, and pepper. Mix just until combined.
  3. Fold in the shredded cheddar cheese and sliced green onions gently.
  4. Divide the mixture evenly among the 12 muffin cups. Press the meat mixture down slightly to fill each cup completely but don’t overpack.
  5. Spread a small spoonful of BBQ sauce on top of each muffin.
  6. Bake for 20-25 minutes, or until the meatloaf muffins reach an internal temperature of 160°F (71°C).
  7. Remove from the oven and let them rest for 5 minutes.
  8. Use a small spatula or knife to carefully lift the muffins out. Serve warm with extra BBQ sauce or your favorite sides.

Notes

Do not overmix the meat to avoid toughness. Use a meat thermometer to ensure internal temperature reaches 160°F. Grease muffin tin well or use silicone liners to prevent sticking. Tent with foil if browning too quickly. Rest muffins before serving for best texture.
