  • 46 bone-in, skin-on chicken thighs (about 2 pounds or 900 grams)
  • 1 can (10.5 oz or 300 g) condensed cream of mushroom soup
  • 1 cup (240 ml) chicken broth
  • 1 cup (150 grams) frozen mixed vegetables (carrots, peas, corn)
  • 1 teaspoon minced garlic
  • 1 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons (28 grams) butter, melted
  • 2 tablespoons (15 grams) all-purpose flour
  • Fresh parsley, chopped (optional, for garnish)

Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides with salt and black pepper.
  2. In a medium bowl, stir together the condensed cream of mushroom soup, chicken broth, minced garlic, and onion powder until smooth.
  3. Place the seasoned chicken thighs at the bottom of the slow cooker. Pour the soup mixture evenly over the chicken. Sprinkle the frozen mixed vegetables on top without stirring.
  4. Melt the butter in a small bowl, then whisk in the flour until smooth. Drizzle this mixture over the top in the slow cooker.
  5. Cover and cook on low for 6 to 7 hours or on high for 3 to 4 hours until the chicken is tender and the gravy thickens.
  6. About 15 minutes before serving, taste and adjust seasoning with salt or pepper. If the gravy is too thin, mix 1 teaspoon cornstarch with cold water and stir into the gravy. Cook uncovered for a bit longer to thicken.
  7. Sprinkle fresh chopped parsley on top before serving. Serve over mashed potatoes, rice, or buttered noodles.

Notes

Pat chicken dry before seasoning to avoid watery gravy. Whisk soup and broth well to avoid lumps. Add butter-flour mixture on top to prevent clumps. Avoid lifting the slow cooker lid during cooking. For crispier skin, broil chicken for 3-5 minutes after cooking. Adjust seasoning at the end as soup base contains sodium. For gluten-free, substitute flour with cornstarch or gluten-free flour. For dairy-free, use coconut milk and plant-based butter alternatives.
