  • 1 cup shredded sharp cheddar cheese (about 100g)
  • 6 slices bacon, cooked and crumbled
  • 2 stalks green onions, thinly sliced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: diced jalapeños or hot sauce for heat

Instructions

  1. Cook 6 slices of bacon in a skillet over medium heat until crispy, about 6-8 minutes. Drain on paper towels and crumble once cooled. Alternatively, use pre-cooked bacon.
  2. Place 4 boneless, skinless chicken breasts in the crockpot. Sprinkle 1 teaspoon garlic powder, 1 teaspoon onion powder, salt, and pepper evenly over them.
  3. Pour 1 cup (240 ml) BBQ sauce over the chicken, coating each piece. Use a spoon or spatula to spread sauce gently if needed.
  4. Cover and cook on low for 6 hours or until chicken is tender and easily shreddable. For quicker cooking, use high for 3-4 hours.
  5. Remove chicken breasts and shred using two forks. Return shredded chicken to the crockpot and stir to combine with BBQ sauce.
  6. Sprinkle 1 cup shredded cheddar cheese and crumbled bacon over the top. Cover and cook for another 10-15 minutes until cheese melts.
  7. Just before serving, sprinkle thinly sliced green onions on top.
  8. If sauce is too thick after cooking, add a splash of water or chicken broth to loosen.
