A simple, quick summer baking recipe featuring juicy peaches, a tender cake-like crumb, and a crunchy streusel topping, all made in one bowl.

  • ½ teaspoon salt
  • ¾ cup (150g) granulated sugar
  • ½ cup (115g) unsalted butter, melted and slightly cooled
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 2 cups peeled and diced fresh peaches
  • ¼ cup (50g) brown sugar
  • ¼ cup (20g) rolled oats
  • 1 teaspoon cinnamon
  • Optional: ¼ cup (30g) chopped pecans or walnuts

Instructions

  1. Preheat your oven to 350°F (175°C). Lightly grease an 8×8-inch baking pan or line it with parchment paper for easy cleanup.
  2. In a large bowl, whisk together the flour, baking powder, salt, and cinnamon until evenly combined.
  3. Stir in the granulated sugar, then pour in the melted butter and mix until the butter coats the flour and the batter looks crumbly.
  4. Add the eggs and vanilla extract, stirring vigorously until the batter is smooth and slightly glossy.
  5. Gently fold in the peeled and diced peaches, being careful not to overmix or mash them.
  6. In a small bowl, combine the brown sugar, rolled oats, and optional chopped nuts. Sprinkle this topping evenly over the batter spread in the pan.
  7. Bake for 30-35 minutes, checking at 30 minutes with a toothpick; it should come out clean or with a few moist crumbs.
  8. Let the bars cool completely in the pan for at least 20 minutes before slicing to allow them to set.

Peel peaches to avoid bitterness and unwanted texture. Mix batter just until combined to keep bars tender. Cooling completely before slicing prevents crumbling.
