A moist, flavorful Southern classic cake loaded with bananas, pineapple, toasted pecans, and shredded coconut, layered with rich cream cheese frosting. Perfect for celebrations and potlucks.

  • 1 teaspoon baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon salt
  • 1 ½ cups granulated sugar (300g)
  • 1 cup vegetable oil (240ml)
  • 3 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 3 medium ripe bananas, mashed
  • 8 oz crushed pineapple, drained (227g)
  • 1 cup shredded sweetened coconut (80g)
  • 1 cup chopped toasted pecans (120g)
  • 8 oz cream cheese, softened (225g)
  • ½ cup unsalted butter, softened (115g)
  • 4 cups powdered sugar, sifted (480g)
  • 1 teaspoon vanilla extract
  • ½ cup chopped toasted pecans (60g), optional for garnish

Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour two 9-inch cake pans or line with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, cinnamon, and salt.
  3. In another bowl, beat sugar with vegetable oil until combined. Add eggs one at a time, mixing well after each. Stir in vanilla extract.
  4. Fold in mashed bananas and drained crushed pineapple.
  5. Gradually add dry ingredients to wet mixture, folding gently until combined but still light.
  6. Fold in shredded coconut and toasted pecans.
  7. Divide batter evenly between prepared pans and smooth tops. Tap pans to release air bubbles.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Rotate pans halfway through baking.
  9. Cool cakes in pans for 10 minutes, then turn out onto cooling racks to cool completely.
  10. Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract, beating until fluffy.
  11. Place one cake layer on serving plate. Spread frosting generously, top with second layer. Frost top and sides evenly. Garnish with toasted pecans if desired.

Notes

Fold ingredients gently to keep batter light and moist. Toast pecans until golden but not burnt. Let cream cheese and butter come to room temperature before making frosting. Chill frosting if too soft before spreading. Store cake refrigerated and bring to room temperature before serving.
