30-Minute Creamy Peanut Butter Banana Overnight Oats

  • 1 cup (90g) rolled oats (old-fashioned oats)
  • 1 cup (240ml) milk of your choice (whole milk, oat milk, or almond milk)
  • ½ cup (120g) plain Greek yogurt (full-fat preferred)
  • 1 tablespoon (12g) chia seeds (optional)
  • 12 tablespoons (15-30ml) honey or maple syrup
  • ½ teaspoon vanilla extract
  • A tiny pinch of salt
  • 1 medium ripe banana (about 120g mashed)
  • 3 tablespoons (48g) creamy peanut butter
  • Optional toppings: sliced banana, extra peanut butter drizzle, chopped peanuts, cinnamon, dark chocolate chips

Instructions

  1. Mash the ripe banana in the bottom of your jar or a small bowl using a fork until mostly smooth with a few tiny chunks.
  2. Add the milk, Greek yogurt, honey or maple syrup, vanilla extract, and peanut butter to the jar over the mashed banana.
  3. Sprinkle in the rolled oats, chia seeds (if using), and a tiny pinch of salt. Do not stir yet.
  4. Stir everything together thoroughly, scraping the bottom and corners of the jar, until the peanut butter is fully incorporated and no dry oats remain. The mixture should be thick and uniform with a light tan color.
  5. Taste and adjust sweetness or peanut butter to your preference.
  6. Seal the jar with a lid and refrigerate for at least 30 minutes, but ideally overnight (6-8 hours).
  7. Before serving, stir the oats well. If too thick, add a splash of milk to reach desired consistency.
  8. Add desired toppings such as sliced banana, a drizzle of warm peanut butter, cinnamon, or dark chocolate chips. Serve cold or at room temperature.

Notes

Use a very ripe banana (brown-speckled) for best sweetness and mashability. For best texture, do not use instant oats. The oats taste even better on day 2 or 3 as flavors meld. To serve warm, microwave the jar for 45-60 seconds (remove lid first) and stir. For vegan version, use plant-based yogurt and maple syrup instead of honey.
