Ingredients

Scale
  • 12 cups popped popcorn (about 1/2 cup unpopped kernels, or 2 bags plain microwave popcorn)
  • 1/2 cup unsalted butter (1 stick)
  • 1/2 cup light brown sugar, packed
  • 1/4 cup light corn syrup
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 cup candy corn
  • 1 cup candy pumpkin pieces (chopped)
  • 1/2 cup M&M’s (Halloween colors)
  • 1/2 cup mini pretzel twists
  • 1/4 cup Halloween sprinkles (optional)

Instructions

  1. Pop the popcorn. If using stovetop, heat 2 tablespoons oil in a large pot over medium-high heat, add 1/2 cup kernels, cover, and shake occasionally until popping slows (3-4 minutes). If using microwave, pop 2 bags according to package directions. Pour into a large mixing bowl, removing unpopped kernels. Set aside.
  2. Preheat oven to 250°F. Line a baking sheet with parchment paper or a silicone mat.
  3. Make the caramel coating: In a medium saucepan, combine butter, brown sugar, corn syrup, and salt. Cook over medium heat, stirring constantly, until butter melts and mixture is combined (2-3 minutes). Once bubbling, let boil for exactly 4 minutes without stirring.
  4. Remove pan from heat. Stir in vanilla extract and baking soda. The mixture will foam; stir until smooth.
  5. Slowly drizzle hot caramel over popcorn while stirring with a spatula to coat evenly. Work quickly.
  6. Spread coated popcorn onto prepared baking sheet in an even layer. Bake for 45 minutes, stirring every 15 minutes.
  7. Let cool completely on the baking sheet for at least 30 minutes without touching.
  8. Once cool, break popcorn into pieces and transfer to a large bowl. Add candy corn, chopped candy pumpkins, M&M’s, and pretzel pieces. Toss gently. Add sprinkles and toss once more.
  9. Serve immediately or store in an airtight container.

Notes

Don’t skip the baking step; it ensures a crunchy coating. Work fast when coating popcorn as caramel sets quickly. Use room temperature popcorn to avoid sogginess. For best results, make on a dry day to avoid humidity affecting crunchiness.
