Ingredients

Scale
  • 1 quart (4 cups) fresh apple cider (unfiltered, unsweetened)
  • 1 bottle (750 ml) chilled Prosecco or dry sparkling wine
  • 1 bottle (750 ml) sparkling apple cider or non-alcoholic bubbly
  • 68 cinnamon sticks
  • 45 star anise pods
  • 1 cup fresh cranberries
  • 23 oranges, sliced into thin rounds
  • 12 apples (Honeycrisp or Fuji), thinly sliced
  • ¼ cup honey or maple syrup (optional)
  • Ice (optional)

Instructions

  1. Chill the apple cider, Prosecco, and sparkling cider in the refrigerator for at least 4 hours or overnight.
  2. Wash and dry the cranberries. Slice oranges into ¼-inch rounds. Slice apples and toss with a little lemon juice to prevent browning.
  3. Arrange carafes or pitchers on the serving table: one for apple cider, one for Prosecco, and one for sparkling cider. Label if desired.
  4. Set up the garnish station: place small bowls with cinnamon sticks, star anise, cranberries, orange slices, and apple slices. Add honey or maple syrup in a small jar with a tiny spoon.
  5. Stack champagne flutes or wine glasses at the end of the bar with a small napkin nearby.
  6. Fill each carafe with its respective liquid. Open the Prosecco just before guests arrive to keep bubbles fresh.
  7. If using ice, place it in a small bucket with tongs off to the side.
  8. Let guests build their own mimosas: start with a base (cider, Prosecco, or both), then add garnishes. A good ratio is ½ cider to ½ sparkling wine.

Notes

Prep garnishes the night before and store in airtight containers. Don’t open Prosecco until just before serving to keep bubbles fresh. For a balanced mimosa, use ½ cider and ½ Prosecco. Leftover apple cider keeps for up to 5 days in the fridge; Prosecco goes flat within 24 hours.
