Best Beer-Braised Bratwurst with Sweet Onions – Easy One-Pan Recipe

Juicy bratwurst seared to perfection, then simmered in beer with sweet onions until tender and flavorful. This one-pan wonder is perfect for game day or a cozy weeknight dinner.

  • 12 oz beer (lager or pilsner recommended)
  • 2 large sweet onions (Vidalia or Walla Walla), thinly sliced
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • Salt and black pepper to taste
  • 46 brat buns
  • Optional toppings: spicy brown mustard, sauerkraut, horseradish sauce

Instructions

  1. Prep the onions and brats: Peel and slice onions into thin rings (about ¼-inch thick). Pat bratwurst dry with paper towels.
  2. Sear the bratwurst: Heat a large cast iron skillet over medium-high heat. Add 1 tablespoon butter until melted and sizzling. Place brats in a single layer and cook 3-4 minutes per side until deeply browned. Remove to a plate.
  3. Cook the onions: Reduce heat to medium. Add remaining 1 tablespoon butter. Add sliced onions, brown sugar, salt, and pepper. Stir, scraping up browned bits from pan. Cook 5 minutes until onions soften and turn translucent.
  4. Add the beer: Pour entire bottle of beer into pan with onions. Stir to combine, scraping up any remaining bits. Bring to a gentle simmer.
  5. Return brats to pan: Nestle seared brats into the onions and beer. Liquid should come about halfway up brats. Add splash of water or more beer if needed. Cover partially with lid or foil, leaving a small crack. Simmer on medium-low for 20-25 minutes, flipping once halfway. Brats should reach internal temperature of 160°F (71°C).
  6. Toast the buns (optional): Split buns and toast in a dry skillet or on grill until lightly golden.
  7. Serve: Place a brat in each toasted bun. Top with generous heap of beer-braised onions using a slotted spoon. Spoon a little pan juices over top if desired. Add mustard, sauerkraut, or other toppings. Serve immediately.

Notes

Do not skip the sear—it creates a crust that locks in juices. Use a meat thermometer to ensure brats reach 160°F. Let brats rest 2-3 minutes before serving. If sauce is too thin, remove brats and simmer uncovered for 2-3 minutes to reduce. Avoid dark stouts or IPAs as they can turn bitter.
