Instructions

  1. Make the filling: In a medium skillet over medium heat, combine shredded chicken, softened cream cheese, buffalo sauce, cheddar cheese, blue cheese (if using), ranch dressing mix, garlic powder, and onion powder. Stir until cream cheese is melted and mixture is hot and bubbly, about 5-7 minutes. Remove from heat and let cool slightly.
  2. Activate the yeast: In a large mixing bowl, combine warm water and brown sugar. Sprinkle yeast on top and let sit for 5-10 minutes until foamy.
  3. Make the dough: Add flour, salt, and melted butter to the yeast mixture. Stir until a shaggy dough forms. Turn out onto a lightly floured surface and knead for 5-7 minutes until smooth and elastic. Place in a lightly greased bowl, cover, and let rise in a warm spot for 30 minutes until doubled in size.
  4. Prepare the baking soda bath: Bring 6 cups of water to a boil in a large pot. Carefully add baking soda (it will foam). Reduce heat to a gentle simmer.
  5. Assemble the pretzel bites: Preheat oven to 425°F. Punch down the dough and divide into 20 equal pieces. Flatten each piece into a 3-inch circle. Place a heaping teaspoon of filling in the center. Bring edges up and pinch to seal. Roll gently between palms to smooth.
