These crispy air fryer honey sriracha chicken wings are shatteringly crisp on the outside, juicy on the inside, and coated in a sticky-sweet-spicy glaze. Ready in under 35 minutes with no deep frying required.

Ingredients

Scale
  • 2 pounds chicken wings, separated into flats and drumettes
  • 1½ teaspoons baking powder (aluminum-free preferred)
  • 1 tablespoon cornstarch
  • 1 teaspoon kosher salt (or ¾ teaspoon table salt)
  • ½ teaspoon garlic powder
  • ¼ teaspoon black pepper, freshly ground
  • 3 tablespoons honey
  • 2 tablespoons sriracha (e.g., Huy Fong)
  • 1 tablespoon unsalted butter
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon rice vinegar (or apple cider vinegar)
  • Sesame seeds for garnish (optional)
  • 23 green onions, thinly sliced

Instructions

  1. Pat the chicken wings dry thoroughly with paper towels until they feel tacky.
  2. Preheat the air fryer to 400°F (200°C) for 3-5 minutes.
  3. In a large bowl, whisk together baking powder, cornstarch, salt, garlic powder, and black pepper.
  4. Add the dried wings to the bowl and toss with your hands until evenly coated. Let sit for 5 minutes.
  5. Arrange wings in a single layer in the air fryer basket, leaving space between each piece. Cook in batches if needed.
  6. Air fry at 400°F for 12 minutes without touching.
  7. Flip the wings with tongs and cook for another 10-12 minutes, until internal temperature reaches 175-180°F and skin is golden and crispy.
  8. While wings cook, make the glaze: In a small saucepan over medium-low heat, combine honey, sriracha, butter, soy sauce, and rice vinegar. Stir until butter melts and mixture simmers for 2-3 minutes. Remove from heat.
  9. Transfer cooked wings to a clean bowl. Pour about half the glaze over them and toss gently to coat. Add more glaze as desired.
  10. Garnish with sesame seeds and sliced green onions. Serve immediately.

Notes

Dry the wings thoroughly for maximum crispiness. Do not overcrowd the air fryer basket. Toss wings in glaze just before serving to maintain crunch. For extra crispiness, let wings rest 2-3 minutes before saucing. To keep cooked wings warm, place on a baking sheet in a 200°F oven without covering.
