These mini football-shaped sausage rolls are made with flaky puff pastry and savory sausage, perfect for game day snacking. They’re easy to make, fun to look at, and disappear before halftime.

  • 1 sheet puff pastry, thawed
  • 1/2 pound ground pork sausage (breakfast or mild Italian)
  • 1/4 cup finely grated Parmesan cheese
  • 1/4 cup plain breadcrumbs
  • 1 large egg, beaten
  • 1 tablespoon Dijon mustard (optional)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon black pepper
  • Sesame seeds or poppy seeds for topping (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set it aside.
  2. In a small bowl, combine the ground sausage, grated Parmesan, breadcrumbs, Dijon mustard (if using), garlic powder, onion powder, and black pepper. Mix gently with your hands or a fork until everything is evenly incorporated. Don’t overmix.
  3. Lightly flour your work surface and unfold the thawed puff pastry sheet. Roll it out just slightly to smooth out the creases, about 1/8-inch thick. Cut the pastry sheet in half lengthwise so you have two long rectangles, each about 4 inches wide.
  4. Divide the sausage mixture in half and shape each half into a long log running down the center of each pastry strip. The log should be about 1 inch in diameter. Leave about 1/2 inch of pastry exposed on each side.
  5. Brush one long edge of each pastry strip with a little of the beaten egg. Carefully fold the other edge over the sausage log and press gently to seal. Pinch the seam firmly.
  6. Using a sharp knife, slice each long tube into 1 1/2-inch pieces. Gently pinch the two short ends of each piece into slight points to form a football shape. Place each piece seam-side down on the prepared baking sheet, leaving about an inch between them.
  7. Brush the tops of all the mini rolls with the remaining beaten egg. Let them sit for 2 minutes, then brush a second coat.
  8. Sprinkle sesame seeds or poppy seeds on top if using.
  9. Bake for 18 to 22 minutes, until the pastry is puffed and deep golden brown and the sausage is cooked through. Let them cool on the baking sheet for 5 minutes before transferring to a serving platter.

Notes

Keep the pastry cold for best results. Double egg wash gives a glossy, golden finish. For make-ahead, assemble and freeze unbaked; bake straight from frozen adding 3-5 minutes. Reheat in oven or air fryer for crispiest results.
