This quick and easy chicken noodle soup uses a rotisserie chicken for deep, soulful flavor in under an hour. It’s the perfect weeknight comfort food that tastes like it simmered all day.

Ingredients

Scale
  • 2 tablespoons unsalted butter
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 3 medium carrots, peeled and sliced into rounds (about 1 ½ cups)
  • 3 celery stalks, sliced (about 1 cup)
  • 4 cloves garlic, minced
  • 8 cups (64 oz) low-sodium chicken broth
  • 2 cups water
  • 1 teaspoon dried thyme (or 3 sprigs fresh thyme)
  • 1 bay leaf
  • ½ teaspoon black pepper, plus more to taste
  • Salt, to taste
  • 1 large rotisserie chicken (about 2 ½ – 3 lbs), skin and bones removed, meat shredded (about 4–5 cups)
  • 8 ounces (about 3 cups) wide egg noodles
  • 2 tablespoons fresh parsley, chopped
  • Fresh lemon juice, from ½ lemon

Instructions

  1. Melt the butter in a large pot over medium heat. Add the diced onion, carrots, and celery. Cook, stirring occasionally, for about 8-10 minutes, until the onions are translucent and the carrots start to soften.
  2. Add the garlic and cook for one more minute, stirring constantly.
  3. Pour in the chicken broth and water. Add the dried thyme, bay leaf, and black pepper. Turn the heat up to high and bring to a boil.
  4. Once boiling, add the egg noodles. Stir to prevent sticking. Reduce heat to a medium simmer and cook according to package directions, usually about 8-10 minutes.
  5. While the noodles cook, shred the chicken: pull meat off bones, discard skin and bones, and use two forks to shred into bite-sized pieces.
  6. Add the shredded chicken to the pot once the noodles are tender. Stir and let simmer for 2-3 minutes to warm the chicken. Taste and adjust salt and pepper.
  7. Remove the pot from heat. Discard the bay leaf. Stir in fresh parsley and squeeze in the lemon juice.
  8. Let the soup rest for 5 minutes before serving.

Notes

For leftovers, cook noodles separately and add to individual bowls to prevent them from becoming mushy. Season in layers for best flavor. Use low-sodium broth to control saltiness. Shred chicken while warm for easier handling. The lemon juice at the end brightens the entire soup.
