  • 1/2 cup sour cream
  • 1/2 cup blue cheese crumbles
  • 2 tablespoons fresh chives, chopped
  • 45 celery stalks, cut into 3-inch sticks
  • 1 cup carrot sticks
  • 1 cup cucumber slices
  • 1 cup cherry tomatoes, halved or whole
  • 1 red bell pepper, sliced into strips
  • Celery leaves for garnish
  • 2 cups crackers (e.g., Ritz or water crackers)
  • 1 cup baguette slices, toasted or fresh
  • 2 cups potato chips (wavy kettle chips recommended)
  • 1 cup pretzel sticks
  • 2 tablespoons fresh parsley, chopped
  • Extra blue cheese crumbles for garnish
  • Drizzle of ranch or blue cheese dressing (optional)

Instructions

  1. Shred the rotisserie chicken: Remove skin and pull meat off bones. Use two forks to shred into bite-sized pieces (about 3-4 cups). Set aside.
  2. Make the buffalo sauce: In a small saucepan over low heat, melt 4 tablespoons unsalted butter. Add 1/2 cup Frank’s RedHot sauce and 1 tablespoon ranch seasoning mix (if using). Whisk until smooth and heated through (2-3 minutes). Do not boil.
  3. Toss the chicken: Pour warm buffalo sauce over shredded chicken and toss until well coated.
  4. Prepare the creamy base: In a small bowl, combine 8 ounces softened cream cheese and 1/2 cup sour cream. Mix until smooth. Spread onto serving board in a thick, even layer, leaving room around edges. Sprinkle with 1/4 cup blue cheese crumbles and 1 tablespoon chopped chives.
  5. Arrange the chicken: Spoon buffalo chicken mixture over the creamy base, spreading evenly but not pressing down. Sprinkle remaining 1/4 cup blue cheese crumbles on top.
  6. Build the board: Arrange vegetables, crackers, chips, and baguette slices around the chicken. Group similar items together for visual appeal.
  7. Garnish and serve: Sprinkle with fresh parsley, extra blue cheese crumbles, and drizzle with ranch or blue cheese dressing if desired. Add celery leaves for color. Serve immediately while chicken is warm.

Notes

For best results, serve immediately while chicken is warm and vegetables are crisp. The buffalo chicken can be made up to 2 days ahead and reheated gently. Vegetables can be cut the night before and stored in cold water. To keep chicken warm during a party, transfer to a small slow cooker on warm setting.
