Instructions

  1. Cook the lentils: Rinse 1 cup of green lentils under cold water. Add to a medium saucepan with 3 cups of water. Bring to a boil, then reduce to a simmer, cover, and cook for 20-25 minutes until tender but still holding shape. Drain any excess water and set aside.
  2. Roast the sweet potatoes: Preheat oven to 425°F (220°C). Toss cubed sweet potatoes with 1 tablespoon olive oil, 1 teaspoon smoked paprika, ½ teaspoon salt, and black pepper. Spread in a single layer on a baking sheet. Roast for 20-25 minutes, flipping halfway, until edges are caramelized and fork-tender.
  3. Prepare the kale: In a large bowl, combine chopped kale with 1 tablespoon lemon juice and a pinch of salt. Massage with your hands for 2-3 minutes until bright green and softened.
  4. Make the dressing: In a small bowl or jar, whisk together ¼ cup tahini, 2 tablespoons lemon juice, 1 minced garlic clove, 2 tablespoons olive oil, ¼ teaspoon cumin, and 3 tablespoons warm water until smooth. Add more water if needed for a pourable consistency. Season with salt to taste.
  5. Assemble the bowls: Divide massaged kale among serving bowls. Top with cooked lentils, roasted sweet potatoes, halved cherry tomatoes, sliced red onion, and avocado slices. Drizzle generously with tahini dressing. Sprinkle with flaky sea salt and a pinch of smoked paprika if desired.
