These classic deviled eggs get a playful Halloween makeover with ghost-shaped piped filling and olive eyes. They’re creamy, tangy, and perfect for parties.

Ingredients

Scale
  • 6 large eggs
  • 3 tablespoons mayonnaise
  • 1 teaspoon yellow mustard
  • 1/2 teaspoon white vinegar
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/4 teaspoon paprika (plus extra for garnish)
  • 6 black olives (sliced into rounds)
  • Optional: fresh chives or dill for garnish

Instructions

  1. Place the 6 eggs in a single layer in a saucepan. Cover with cold water by about an inch. Bring to a rolling boil over high heat. Once boiling, cover the pan, remove from heat, and let sit for exactly 12 minutes.
  2. While eggs cook, fill a large bowl with ice and cold water. Transfer the boiled eggs to the ice bath and let sit for at least 10 minutes.
  3. Gently tap each egg on the counter to crack the shell all over. Peel starting from the wider end. Rinse under cool water and pat dry.
  4. Slice each egg lengthwise with a sharp knife. Pop out the yolks into a small mixing bowl. Arrange the egg white halves on a serving platter, cut side up.
  5. Add mayonnaise, mustard, vinegar, salt, pepper, and 1/4 teaspoon paprika to the yolks. Mash with a fork until smooth and creamy, about 2 minutes. Adjust seasoning to taste.
  6. Spoon the yolk mixture into a piping bag fitted with a large star tip. Hold the bag straight up over an egg white half. Squeeze gently, starting from the center and lifting the bag to create a tall, peaked swirl. Release pressure and pull straight up to form a point. Repeat for all 12 halves.
  7. Press two black olive slices into each ghost for eyes.
  8. Lightly dust with paprika. Garnish with fresh chives or dill if desired. Serve immediately or refrigerate until ready.

Notes

For easier peeling, add a teaspoon of baking soda to the boiling water. Older eggs peel more easily than fresh ones. The filling can be made a day ahead; pipe onto egg whites just before serving. If you don’t have a piping bag, use a sturdy zip-top bag with the corner snipped off.
