  • 1 medium lime, juiced (about 2 tablespoons)
  • 1/4 cup finely diced red onion
  • 1 small jalapeño, seeded and minced (optional)
  • 1/4 cup fresh cilantro, chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 small Roma tomato, diced and seeded
  • 1 can (6 oz) black olives, sliced
  • 1 bag tortilla chips (preferably Tostitos Scoops)
  • Additional tortilla chips for the ‘bolts’
  • Sour cream or Greek yogurt (optional, for stitches)

Instructions

  1. Prep your avocados: Cut each avocado in half lengthwise, remove the pit, and scoop the flesh into a mixing bowl. Score the flesh in a grid pattern while still in the skin for easier scooping. Add lime juice immediately to prevent browning.
  2. Mash to your preferred texture: Using a fork, mash the avocados until about 70% mashed and 30% small chunks. Add salt and pepper.
  3. Add the mix-ins: Fold in diced red onion, minced jalapeño (if using), chopped cilantro, and diced tomato. Mix gently until evenly distributed. Taste and adjust salt.
  4. Prepare your cups: Arrange small cups (about 4 ounces each) on a serving tray.
  5. Fill the cups: Divide the guacamole evenly among the cups, filling almost to the top (leave about 1/4 inch space). Smooth the top slightly.
  6. Create the Frankenstein faces: For each cup, place two black olive slices for eyes (positioned slightly unevenly), add a small strip of black olive for the mouth (cut a slice in half and arrange in a slight zigzag), and insert two tortilla chip ‘bolts’ on the sides, angled slightly upward.
  7. Add the stitches (optional): Put a small amount of sour cream or Greek yogurt in a zip-top bag, snip off a tiny corner, and pipe small dots or lines across the top of the guacamole.
  8. Serve immediately or refrigerate: Best served within an hour. If prepping ahead, make the guacamole base and store with plastic wrap pressed onto the surface; assemble faces just before serving.

Notes

Avocados should be ripe but not mushy. For best results, assemble cups no more than 30 minutes before serving to prevent browning and soggy chips. Leftover guacamole can be stored in an airtight container with plastic wrap pressed onto the surface for up to 1 day.
