A quick and easy weeknight dinner featuring caramelized honey garlic salmon and roasted broccoli, ready in under 30 minutes with simple ingredients.

Ingredients

Scale
  • 4 salmon fillets (6 oz each, skin-on or skinless)
  • 2 tablespoons olive oil (or avocado oil)
  • Salt and black pepper to taste
  • 1/3 cup honey
  • 4 cloves garlic, minced
  • 3 tablespoons soy sauce (low-sodium recommended; tamari or coconut aminos for gluten-free)
  • 1 tablespoon rice vinegar (apple cider vinegar works in a pinch)
  • 1 teaspoon sesame oil (optional)
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening, if needed)
  • 2 heads broccoli, cut into florets (stems peeled and sliced thin)
  • 2 tablespoons olive oil (for broccoli)
  • Salt and black pepper to taste (for broccoli)
  • 1/2 teaspoon garlic powder (optional, for broccoli)
  • Lemon wedges for serving

Instructions

  1. Preheat your oven to 400°F (200°C). Position the rack in the upper third of the oven. Line a baking sheet with parchment paper or foil.
  2. Toss broccoli florets and sliced stems with 2 tablespoons olive oil, salt, pepper, and garlic powder. Spread in a single layer on one half of the baking sheet. Roast for 10 minutes.
  3. Pat salmon fillets dry with paper towels. Season both sides generously with salt and pepper. Drizzle with 2 tablespoons olive oil and rub in gently.
  4. In a small saucepan over medium heat, combine honey, minced garlic, soy sauce, rice vinegar, sesame oil, and red pepper flakes. Whisk and bring to a simmer. Let bubble for 2-3 minutes until slightly thickened. If desired, stir in cornstarch slurry and cook for another minute until glossy. Remove from heat.
  5. After broccoli has roasted for 10 minutes, push it to one side and place salmon fillets skin-side down on the other side. Brush each fillet generously with honey garlic sauce, reserving about half for later.
  6. Roast for 8-10 minutes until salmon is almost cooked through (internal temperature 125°F for medium-rare or 135°F for medium).
  7. Switch oven to broil. Brush salmon with another layer of reserved sauce. Broil for 1-2 minutes, watching carefully, until edges caramelize.
  8. Remove from oven and let salmon rest for 2-3 minutes. Drizzle any remaining sauce over the top and serve with lemon wedges.

Notes

Pat salmon dry for best browning. Watch garlic carefully to avoid burning. Use a meat thermometer for perfect doneness. Double the sauce for extra. Broccoli can be broiled alongside salmon for extra crispiness.
