Best Turkey and Stuffing Casserole Easy Leftover Recipe

This casserole takes everything good about Thanksgiving dinner and layers it into one dish. The turkey stays moist, the stuffing gets those crispy edges everyone fights over, and there’s a creamy sauce that ties it all together.

  • 3 cups cooked turkey, shredded or diced
  • 4 cups leftover stuffing
  • 1 cup leftover gravy
  • 1/2 cup chicken or turkey broth, low-sodium
  • 4 oz cream cheese, softened
  • 1 cup shredded cheese (cheddar, mozzarella, or mix)
  • 1/2 cup sour cream
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup frozen peas and carrots (optional)
  • 1 cup leftover stuffing, crumbled (for topping)
  • 1/2 cup shredded cheese (for topping)
  • 2 tbsp melted butter

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish lightly with butter or non-stick spray.
  2. Shred or dice the turkey into bite-sized pieces. If dry, toss with a tablespoon of melted butter or olive oil.
  3. In a large mixing bowl, combine cream of mushroom soup, softened cream cheese, sour cream, and 1/2 cup of the gravy. Whisk until smooth.
  4. Add shredded turkey, frozen peas and carrots (if using), and half of the shredded cheese to the bowl. Fold gently until combined.
  5. Spread leftover stuffing evenly across the bottom of the greased baking dish. Press down lightly.
  6. Pour the turkey mixture over the stuffing layer and spread evenly. Drizzle remaining 1/2 cup of gravy over the top, then sprinkle with remaining shredded cheese.
  7. For the topping, crumble the extra cup of stuffing over the cheese. Drizzle with melted butter. Press down gently.
  8. Cover the dish with foil and bake for 20 minutes. Remove foil and bake for another 15-20 minutes, until top is golden brown and edges are bubbly.
  9. Let rest for 5-10 minutes before serving. Internal temperature should reach 165°F (74°C).

Notes

Don’t skip the resting time to allow the casserole to set. For extra crispy edges, bake uncovered at 350°F for the entire time. Assemble up to 24 hours in advance and add 10 minutes to covered baking time if starting from cold. Toast the stuffing topping separately for maximum crunch.
