  • 2 cups peeled and chopped apples (about 2 medium apples)
  • 2 tablespoons granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)
  • 1/2 cup granulated sugar (for glaze)
  • 1/4 cup buttermilk (for glaze)
  • 1/4 cup unsalted butter (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)
  • Pinch of salt (for glaze)

Instructions

  1. Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
  2. Peel and chop apples into 1/2-inch cubes. Toss with 2 tablespoons sugar and 1 teaspoon cinnamon. Set aside.
  3. In a medium bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, beat softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  5. Beat in eggs one at a time, then stir in vanilla extract.
  6. Alternate adding dry ingredients and buttermilk, starting and ending with flour. Mix until just combined.
  7. Gently fold in the cinnamon-sugar coated apples.
  8. Spread batter evenly in prepared pan.
  9. Bake for 40-45 minutes, until a toothpick inserted in center comes out clean.
  10. While cake bakes, make glaze: In a small saucepan, combine 1/2 cup sugar, 1/4 cup buttermilk, and 1/4 cup butter. Bring to a gentle boil over medium heat, stirring occasionally. Boil 2-3 minutes until thickened. Remove from heat and stir in vanilla and salt.
  11. As soon as cake comes out of oven, poke holes all over top with a skewer or fork. Pour warm glaze over hot cake.
  12. Let cool in pan on wire rack for at least 30 minutes before serving.

For best results, use room temperature ingredients. Don’t skip tossing apples in cinnamon sugar—it creates caramelized pockets. Poke holes in warm cake before glazing to ensure absorption. Let cake rest at least 30 minutes before serving. Store covered at room temperature up to 3 days. Freezes well for up to 3 months.
