  • 1 cup all-purpose flour (125g)
  • 1½ teaspoons baking powder

  • 6 tablespoons cold unsalted butter, cubed (85g)
  • ½ cup whole milk (120ml)
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon fresh lemon juice
  • Optional: vanilla ice cream or whipped cream for serving

Instructions

  1. Preheat your grill to medium heat, around 350°F (175°C). If using charcoal, set it up for indirect grilling.
  2. Halve and pit the peaches. Toss them gently with granulated sugar, cinnamon, and lemon juice. Let sit for 10 minutes to macerate.
  3. Place peach halves cut-side down on the grill. Grill for 3-4 minutes until grill marks appear and peaches soften. Flip and grill another 2 minutes. Remove and let cool slightly, then slice each half into 3-4 wedges.
  4. In a medium bowl, whisk together flour, brown sugar, baking powder, and salt.
  5. Cut cold butter into small cubes and cut into the dry ingredients until mixture resembles coarse crumbs with pea-sized bits.
  6. In a small bowl, stir together milk and vanilla extract.
  7. Pour the milk mixture into the flour and butter mixture. Stir just until combined; do not overmix.
  8. Lightly grease a 10-inch cast iron skillet. Spread the batter evenly across the bottom.
  9. Arrange the grilled peach slices on top, pressing them gently into the batter.
  10. Place the skillet on the grill, cover with the lid, and cook for 25-30 minutes at steady 350°F (175°C) until the topping is golden brown and a toothpick inserted comes out clean.
  11. Remove skillet from grill and let cool for 10 minutes before serving. Serve warm with vanilla ice cream or whipped cream if desired.

Grilling peaches before baking adds a smoky caramel flavor that elevates the cobbler. Use medium heat to avoid charring. Under-mixing the batter prevents a tough crust.
