  • 1 cup (245g) pumpkin puree
  • 1 cup (240ml) milk (whole milk preferred, or unsweetened oat/almond milk for dairy-free)
  • 2 large eggs, room temperature
  • 1/3 cup (67g) packed brown sugar (light or dark)
  • 2 teaspoons pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • Butter or coconut oil for greasing the muffin tin
  • Optional mix-ins: 1/2 cup chopped pecans or walnuts, 1/4 cup raisins or dried cranberries, or a handful of chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin generously with butter or coconut oil.
  2. In a large bowl, whisk together the eggs, pumpkin puree, milk, brown sugar, and vanilla extract until smooth and uniform.
  3. Add the rolled oats, pumpkin pie spice, baking powder, and salt. Stir with a spatula until the oats are fully coated and no dry spots remain. Let the mixture sit for 2 minutes.
  4. If using any mix-ins, fold them in now.
  5. Scoop the mixture into the prepared muffin tin using a 1/3 cup measure or ice cream scoop, filling each cup almost to the top. The mixture should make exactly 12 cups.
  6. Bake for 20 to 22 minutes, until the tops are set and golden brown around the edges. A toothpick inserted into the center should come out mostly clean with a few moist crumbs.
  7. Let the oatmeal cups cool in the pan for 5 minutes. Then run a knife around the edges and transfer them to a cooling rack.
  8. Serve warm or at room temperature.
