A quick and easy single serve chocolate chip cookie baked in a skillet, perfect for a warm, gooey dessert without leftovers.

Ingredients

Scale
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons granulated sugar
  • 2 tablespoons brown sugar
  • ½ teaspoon vanilla extract
  • ¼ cup + 1 tablespoon all-purpose flour
  • ⅛ teaspoon baking powder
  • Pinch of salt
  • 3 tablespoons chocolate chips (semi-sweet preferred)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine softened unsalted butter, granulated sugar, and brown sugar. Stir until creamy and slightly fluffy.
  3. Add vanilla extract and mix well.
  4. Add all-purpose flour, baking powder, and salt to the wet ingredients. Stir gently until just combined; do not overmix.
  5. Fold in chocolate chips evenly.
  6. Lightly grease a small oven-safe skillet or ramekin with butter or non-stick spray.
  7. Transfer the batter to the skillet, spreading evenly but keeping it slightly lumpy.
  8. Bake for 12–15 minutes until edges are golden brown and center is slightly soft and gooey.
  9. Let cool for 5 minutes before serving.

Notes

Use softened but not melted butter for best texture. Watch baking time closely starting at 12 minutes to achieve a gooey center with crispy edges. Tent with foil if browning too fast. For a crispier top, broil for 30 seconds at the end. Quality chocolate chips like Ghirardelli or Guittard recommended. Can substitute almond flour for gluten-free or coconut oil for dairy-free versions.
