This quick and easy turkey chili with black beans comes together in just 30 minutes, using simple pantry ingredients. It’s the perfect comfort food for busy weeknights, delivering deep, smoky flavor without hours of simmering.

Ingredients

Scale
  • 1 lb (450g) ground turkey (93% lean)
  • 1 large yellow onion, diced
  • 4 cloves garlic, minced
  • 2 cans (15 oz / 425g each) black beans, drained and rinsed
  • 1 can (14.5 oz / 411g) diced tomatoes (fire-roasted preferred)
  • 1 can (8 oz / 227g) tomato sauce
  • 1 chipotle pepper in adobo sauce, minced, plus 1 teaspoon sauce
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 cup (240ml) low-sodium chicken broth
  • Salt and black pepper to taste
  • Optional toppings: shredded cheddar cheese, sour cream, diced avocado, fresh cilantro, lime wedges, tortilla chips

Instructions

  1. Brown the Turkey (5 minutes): Heat a large pot over medium-high heat. Add the ground turkey and cook, breaking it apart, until deeply browned and no longer pink. If the turkey releases liquid, cook until it evaporates.
  2. Sauté the Aromatics (3 minutes): Push the turkey to one side. Add the diced onion to the empty space and cook for 2-3 minutes until softened. Add the minced garlic and cook for 30 seconds until fragrant. Stir everything together.
  3. Bloom the Spices (1 minute): Add chili powder, cumin, smoked paprika, and oregano to the pot. Stir constantly for about 1 minute until fragrant.
  4. Add the Liquids and Beans (2 minutes): Pour in the diced tomatoes (with juices), tomato sauce, and chicken broth. Add the drained black beans, minced chipotle pepper, and adobo sauce. Scrape the bottom of the pot to lift browned bits.
  5. Simmer (15 minutes): Bring to a boil, then reduce heat to low. Simmer uncovered for 15 minutes, stirring occasionally, until thickened.
  6. Season and Serve (2 minutes): Taste and add salt and pepper as needed. Ladle into bowls and top with desired toppings.

Notes

For deeper flavor, let the chili sit for 10 minutes off the heat before serving. To thicken, simmer longer uncovered or mash some black beans against the pot. For a vegetarian version, swap turkey for two cans of pinto beans or crumbled firm tofu.
