Creamy Baked Feta Pasta with Cherry Tomatoes

A cozy, comforting one-pan pasta dish featuring baked feta cheese and roasted cherry tomatoes that create a naturally creamy sauce without any cream.

  • 2 cups (300g) cherry tomatoes, washed and halved
  • 7-ounce (200g) block of full-fat feta cheese
  • 3 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced or thinly sliced
  • ½ teaspoon red pepper flakes (optional)
  • A handful of fresh basil leaves, torn or roughly chopped
  • 8 ounces (225g) dry pasta (penne, fusilli, or spaghetti)
  • Salt and black pepper to taste
  • 1 teaspoon lemon zest (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the block of feta in the center of an oven-safe baking dish. Surround it evenly with halved cherry tomatoes and scatter the minced garlic over everything.
  3. Drizzle 3 tablespoons of olive oil over the feta and tomatoes. Season with salt, black pepper, and red pepper flakes if using.
  4. Roast in the oven for 30 minutes, shaking the dish or stirring the tomatoes halfway through to avoid burning.
  5. While the feta and tomatoes roast, boil 8 ounces (225g) of pasta in salted water until al dente (8-10 minutes). Drain and reserve about ½ cup (120 ml) of pasta water.
  6. Remove the baking dish from the oven. Mash the feta and mix it with the roasted tomatoes, garlic, and oil until creamy.
  7. Add the cooked pasta to the baking dish and toss well to coat. Add reserved pasta water a little at a time if the sauce is too thick.
  8. Finish by scattering torn basil leaves and sprinkling lemon zest on top.
  9. Serve immediately while hot.

Notes

Reserve pasta water to loosen the sauce and help it cling to the pasta. Watch the feta after 25 minutes to avoid over-browning. Use a whole block of feta for best creamy texture. Fresh basil and lemon zest add brightness. Variations include adding sautéed greens, swapping tomatoes, or using gluten-free pasta.
