A creamy, spicy, and tangy buffalo chicken dip with a bold blue cheese swirl, perfect for game day or casual snacking. This easy recipe combines shredded chicken, cream cheese, buffalo sauce, and cheeses for a crowd-pleasing appetizer.

Ingredients

Scale
  • 2 cups shredded cooked chicken (about 300g) – rotisserie chicken recommended
  • 8 oz cream cheese, softened (225g) – full-fat preferred
  • 1/2 cup buffalo hot sauce (120ml) – Frank’s RedHot recommended
  • 1/2 cup sour cream (120ml) – Greek yogurt can substitute
  • 1/2 cup blue cheese crumbles (75g) – good quality like Maytag
  • 1 cup shredded cheddar cheese (115g) – sharp or mild
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Black pepper, freshly ground, to taste
  • Optional garnish: chopped green onions or fresh parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Soften the cream cheese by leaving it at room temperature for about 30 minutes.
  3. In a mixing bowl, beat the cream cheese with a hand mixer until smooth and creamy, about 1-2 minutes.
  4. Add the sour cream, buffalo hot sauce, garlic powder, onion powder, and black pepper; mix until fully combined and smooth.
  5. Fold in the shredded chicken and shredded cheddar cheese gently with a spatula, ensuring even distribution without breaking up the chicken too much.
  6. Transfer the mixture to an 8×8-inch oven-safe baking dish, spreading it out evenly.
  7. Scatter the blue cheese crumbles evenly over the top and swirl them into the top layer using a knife or small spoon to create pockets of flavor.
  8. Bake in the preheated oven for 20-25 minutes, until edges bubble and the top starts to turn golden.
  9. Remove from oven and let cool for 5 minutes before serving to allow the dip to thicken slightly.

Notes

Use shredded rotisserie chicken for best flavor and convenience. Soften cream cheese naturally for smooth texture. Adjust buffalo sauce to control heat level. Swirling blue cheese on top creates flavorful pockets. For a crispier top, broil 1-2 minutes at the end watching carefully. Leftovers keep well refrigerated for up to 3 days and taste better after a day.
