  • 1/3 cup sun-dried tomatoes, chopped (packed in oil)
  • 3/4 cup heavy cream (or coconut cream for dairy-free)
  • 1/3 cup Parmesan cheese, freshly grated
  • 2 cups fresh baby spinach, loosely packed
  • 1 teaspoon dried Italian seasoning (basil, oregano, thyme blend)
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the shrimp under cold water and pat dry with paper towels. Season lightly with salt, pepper, and a pinch of Italian seasoning. Set aside.
  2. Place a large skillet over medium heat and add 1 tablespoon olive oil and 1 tablespoon butter. Let the butter melt and foam.
  3. Add the shrimp in a single layer. Cook for about 2 minutes on one side until pink and slightly golden, then flip and cook another 1-2 minutes. Remove shrimp from the skillet and set aside.
  4. Lower heat to medium-low. Add the minced garlic and chopped sun-dried tomatoes to the pan. Stir frequently and cook until garlic is fragrant but not browned, about 1-2 minutes.
  5. Pour in the heavy cream and bring to a gentle simmer. Stir in the grated Parmesan cheese and remaining 1 tablespoon butter. Season with salt, pepper, Italian seasoning, and optional red pepper flakes. Let the sauce thicken slightly, about 3-4 minutes, stirring occasionally.
  6. Add the fresh spinach and stir until wilted, about 1-2 minutes. Return the cooked shrimp to the skillet and coat everything evenly with the creamy sauce.
  7. Taste and adjust seasoning if needed. Sprinkle chopped fresh parsley over the top and serve immediately.

Use firm, medium-sized shrimp for best texture. Add a squeeze of fresh lemon juice at the end for brightness. If sauce is too thick, add a splash of chicken broth or water to loosen. Avoid overcooking shrimp to prevent rubbery texture. For dairy-free, substitute heavy cream with coconut cream and Parmesan with nutritional yeast.
