A creamy, comforting honeynut squash soup topped with crispy fried sage leaves. This easy recipe comes together in under 45 minutes and is perfect for cold weather.

Ingredients

Scale
  • 3 medium honeynut squashes (about 2 pounds total)
  • 1 large yellow onion, roughly chopped
  • 4–5 garlic cloves, smashed
  • 3 tablespoons olive oil
  • 4 cups low-sodium vegetable broth
  • 1/2 cup heavy cream
  • 20–25 fresh sage leaves
  • 2 tablespoons unsalted butter
  • Salt and black pepper to taste
  • 1 tablespoon maple syrup (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Wash honeynut squashes, cut in half lengthwise, and scoop out seeds. Place cut-side up on baking sheet. Add chopped onion and smashed garlic cloves around them. Drizzle with 2 tablespoons olive oil, season with salt and pepper, and toss to coat.
  3. Roast for 30-35 minutes until squash is tender and edges caramelize. Let cool 5 minutes.
  4. Scoop squash flesh from skins. Transfer flesh, roasted onions, and garlic to a large pot. Add vegetable broth. Bring to a simmer over medium-high heat, then reduce to low and cook 5 minutes.
  5. Blend soup until smooth using an immersion blender or regular blender (in batches). Return to pot.
  6. Stir in heavy cream and maple syrup (if using). Season with salt and pepper to taste. Keep warm over low heat.
  7. In a small skillet, melt butter over medium heat. Add sage leaves in a single layer and fry 30-45 seconds per side until bright green and crisp. Transfer to paper towels and sprinkle with salt.
  8. Ladle soup into bowls, top with crispy sage leaves, and serve immediately.

Notes

Honeynut squash skin is edible and becomes tender when roasted. For a vegan version, substitute heavy cream with full-fat coconut milk and use olive oil instead of butter for the sage. The soup can be stored in the fridge for up to 5 days or frozen for up to 3 months. Make fresh crispy sage just before serving.
