  • 2 shots (about 2 oz / 60 ml) espresso or strong coffee, freshly brewed
  • 3/4 cup (180 ml) whole milk or milk alternative (oat milk recommended)
  • 1 tablespoon packed light brown sugar
  • 2 tablespoons pumpkin puree (canned or fresh)
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon pumpkin pie spice (blend of cinnamon, nutmeg, ginger, and cloves)
  • Ice cubes, enough to fill serving glass
  • Optional: pinch of sea salt
  • Optional variations: maple syrup or honey instead of brown sugar, cayenne or extra ginger for spice kick, cream cheese or mascarpone for extra creaminess

Instructions

  1. Brew 2 shots (about 2 oz / 60 ml) of espresso or strong coffee. Let cool slightly for about 2 minutes.
  2. In a small mixing cup, combine milk, pumpkin puree, brown sugar, vanilla extract, and pumpkin pie spice.
  3. Use a milk frother or handheld frother to whip the mixture until light, fluffy, and roughly doubled in volume (about 1 to 2 minutes).
  4. Fill a tall glass about 3/4 full with ice cubes.
  5. Slowly pour the brewed espresso over the ice.
  6. Gently spoon or pour the pumpkin cold foam over the iced espresso, allowing it to float on top.
  7. Optionally, sprinkle a tiny pinch of pumpkin pie spice or cinnamon on top.
  8. Insert a straw and serve immediately.

Notes

Use freshly brewed espresso or strong coffee for best flavor. Chill milk before frothing for thicker foam. Brown sugar can be lightly toasted for deeper flavor. Avoid pumpkin pie filling; use plain pumpkin puree. Assemble just before serving to keep foam fluffy and ice from melting. Re-froth foam if stored. Oat milk froths best for dairy-free versions.
