  • 1 cup heavy cream (240ml)
  • ½ cup chicken broth (120ml), preferably low sodium
  • 3 cloves garlic, minced
  • ½ cup freshly grated Parmesan cheese (about 50g)
  • 1 tsp Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp olive oil
  • Salt and black pepper to taste
  • A handful of fresh basil or parsley, chopped for garnish

Instructions

  1. Pat dry the chicken breasts with paper towels and season both sides generously with salt, pepper, and Italian seasoning. (Prep time: 5 minutes)
  2. Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook undisturbed for 5-6 minutes until golden brown on one side. Flip and cook another 5 minutes until almost cooked through. Remove chicken and set aside. (Cook time: 10-12 minutes)
  3. Reduce heat to medium and add minced garlic to the same pan. Stir for about 30 seconds until fragrant. Add chopped sun-dried tomatoes and cook for 2 minutes to release flavor. (Cook time: 3 minutes)
  4. Pour in chicken broth, scraping browned bits from the pan bottom. Let simmer for 2 minutes to reduce slightly. Add heavy cream, stirring continuously, and bring to a gentle simmer. (Cook time: 3-4 minutes)
  5. Stir in grated Parmesan cheese until melted and smooth. Add red pepper flakes if using. Taste and adjust salt and pepper. Sauce should be creamy and slightly thickened. (Cook time: 2 minutes)
  6. Return chicken breasts to the pan, nestling them into the sauce. Spoon sauce over the top. Cover loosely and simmer on low heat for 5 minutes or until chicken reaches an internal temperature of 165°F (74°C). (Cook time: 5 minutes)
  7. Sprinkle chopped fresh basil or parsley on top and serve hot with your favorite sides.
