  • 4 boneless, skinless chicken breasts (about 1.5 pounds / 680 g)
  • Salt and pepper, to taste
  • 2 tablespoons extra virgin olive oil
  • 3 cloves garlic, minced
  • 1/2 cup chopped sun-dried tomatoes (oil-packed preferred)
  • 1 cup chicken broth (240 ml)
  • 3/4 cup heavy cream (180 ml)
  • 1/3 cup grated Parmesan cheese
  • 1/4 cup chopped fresh basil
  • 1/4 teaspoon red pepper flakes (optional)
  • 1 tablespoon butter

Instructions

  1. Pat chicken breasts dry and season both sides generously with salt and pepper.
  2. Heat olive oil over medium-high heat in a large skillet. Add chicken and cook 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F / 74°C). Remove chicken and keep warm.
  3. Lower heat to medium. Add minced garlic and sun-dried tomatoes to the skillet. Cook 1-2 minutes until fragrant, stirring often.
  4. Pour in chicken broth, scraping the pan to loosen browned bits. Simmer 3-4 minutes to reduce slightly.
  5. Reduce heat to low. Stir in heavy cream and grated Parmesan cheese. Cook 3-5 minutes until sauce thickens, stirring continuously. Add more broth or cream if sauce is too thick.
  6. Stir in butter, fresh basil, and red pepper flakes. Adjust salt and pepper to taste.
  7. Return chicken to skillet, spoon sauce over top, and warm together for 2 minutes before serving.

Notes

Use fresh chicken breasts for best texture. If using dry-packed sun-dried tomatoes, soak in warm water before use. To prevent cream sauce from curdling, keep heat low and stir gently. For dairy-free, substitute heavy cream with coconut milk and Parmesan with nutritional yeast. Chicken thighs can be used but adjust cooking time accordingly.
