  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon dried Italian herbs (basil, oregano, thyme mix)
  • 1/4 teaspoon crushed red pepper flakes (optional)
  • 2 tablespoons fresh basil or parsley, chopped (for garnish)
  • 1/4 cup dry white wine (optional, can substitute with more broth)

Instructions

  1. Pat the chicken breasts dry with paper towels. Place each breast between two sheets of plastic wrap and gently pound them to about 1/2-inch thickness. Season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Add chicken breasts and sear for 3-4 minutes per side until golden brown and cooked through (internal temperature 165°F). Remove chicken and set aside, tented with foil.
  3. Lower heat to medium. Add minced garlic to the skillet and sauté for about 30 seconds until fragrant but not browned.
  4. Add chopped sun-dried tomatoes and stir for 1 minute to release oils and flavor.
  5. Optional: Pour in white wine or extra broth and scrape up browned bits. Simmer for 1-2 minutes to reduce slightly.
  6. Stir in chicken broth and heavy cream, bringing to a gentle simmer. Add Parmesan cheese, dried Italian herbs, and crushed red pepper flakes if using. Stir continuously until cheese melts and sauce thickens, about 3-5 minutes. Add more broth if sauce is too thick.
  7. Return chicken breasts to the pan, spoon sauce over them, cover loosely, and simmer on low heat for 3 minutes to meld flavors and finish cooking.
  8. Sprinkle chopped basil or parsley over the top. Taste and adjust seasoning with salt and pepper if needed. Serve immediately.
