A quick and comforting creamy chicken casserole topped with a buttery, crunchy Ritz cracker crust. Perfect for busy weeknights and crowd-pleasing dinners.

Ingredients

Scale
  • 3 cups cooked shredded chicken (rotisserie chicken recommended)
  • 1 can (10.5 oz) cream of chicken soup (Campbell’s recommended)
  • 1 cup sour cream
  • ½ cup mayonnaise
  • 2 cups shredded sharp cheddar cheese (plus ½ cup reserved for topping)
  • 3 stalks green onions, sliced thin
  • 1 sleeve Ritz crackers, crushed (about 30 crackers)
  • 6 tablespoons butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Shred your cooked chicken to make about 3 cups.
  3. In a large bowl, combine cream of chicken soup, sour cream, mayonnaise, garlic powder, and onion powder. Stir until smooth.
  4. Add shredded chicken and sliced green onions to the creamy mixture and stir well to coat.
  5. Stir in 1½ cups of shredded cheddar cheese, reserving ½ cup for topping.
  6. Season with salt and pepper to taste.
  7. Transfer the mixture to a greased 9×13-inch casserole dish and level it out with a spatula.
  8. Crush the Ritz crackers until fine crumbs form. Mix the crumbs with melted butter and the reserved ½ cup shredded cheddar cheese.
  9. Sprinkle the buttery Ritz mixture evenly over the casserole.
  10. Bake uncovered for 30-35 minutes until bubbling and golden brown on top.
  11. Let the casserole rest for 5-10 minutes before serving.

Notes

If topping browns too fast, tent with foil halfway through baking. For extra creaminess, stir in a splash of milk or cream before baking. Use gluten-free crackers and dairy-free substitutes for allergy-friendly versions. Freeze casserole base without topping for up to 2 months.
