  • 45 garlic cloves, minced
  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 cup heavy cream
  • 3/4 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 1 teaspoon dried Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley, chopped (optional)

Instructions

  1. Pat the chicken breasts dry and season both sides generously with salt, pepper, and Italian seasoning.
  2. Heat olive oil and butter in a large skillet over medium-high heat until the butter foams but does not brown, about 2 minutes.
  3. Place the chicken breasts in the skillet and cook for 5-6 minutes per side until golden brown and cooked through (internal temperature 165°F). Avoid flipping too often.
  4. Transfer the cooked chicken to a plate and tent with foil to keep warm.
  5. Lower heat to medium, add minced garlic to the skillet, and sauté for 30-45 seconds until fragrant but not browned.
  6. Pour in chicken broth and scrape up any browned bits from the pan.
  7. Stir in heavy cream and grated Parmesan cheese. Cook over medium-low heat, stirring frequently, until the sauce thickens slightly, about 3-5 minutes. Add more broth or cream if too thick.
  8. Nestle the chicken breasts back into the sauce and simmer for 2-3 minutes to meld flavors and warm through.
  9. Sprinkle chopped fresh parsley over the top and serve immediately.

Notes

If the sauce separates or looks grainy, whisk in a teaspoon of flour or cornstarch dissolved in cold water to smooth it out. Let the chicken rest before slicing to keep it juicy. Use room temperature cream to prevent curdling. Control heat to keep sauce from breaking. Add parmesan off the heat for a silky finish.
