These creamy overnight oats are made with rolled oats, ripe banana, and peanut butter for a naturally sweet, no-cook breakfast that’s perfect for meal prep. Just mix, refrigerate, and wake up to a delicious, pudding-like breakfast.

  • 1 cup (90g) rolled oats (old-fashioned)
  • 1 large ripe banana, mashed (about 120g)
  • 2 tablespoons (32g) creamy peanut butter
  • 1 cup (240ml) milk (whole, 2%, or oat milk)
  • 1 tablespoon (12g) chia seeds (optional but recommended)
  • 1 tablespoon (15ml) maple syrup or honey (optional)
  • Pinch of salt
  • ½ teaspoon vanilla extract (optional)
  • Toppings: sliced banana, extra peanut butter drizzle, chopped peanuts, dark chocolate chips, or cinnamon (optional)

Instructions

  1. Mash the banana in a jar or container until mostly smooth with a few tiny lumps.
  2. Add the milk and peanut butter (and vanilla extract if using). Stir until the peanut butter is fully incorporated and the mixture is pale and creamy.
  3. Add the rolled oats, chia seeds (if using), and a pinch of salt. Stir until everything is combined, scraping the sides and bottom.
  4. Taste and sweeten with maple syrup or honey if desired.
  5. Seal the jar and refrigerate for at least 6 hours, preferably overnight (8-12 hours).
  6. In the morning, stir the oats. If too thick, add a splash of milk to reach desired consistency.
  7. Add toppings of your choice (sliced banana, extra peanut butter, chopped peanuts, chocolate chips, cinnamon).
  8. Enjoy cold or microwave for 30-45 seconds for warm oats (remove lid first).

Notes

Toast the oats at 350°F for 8-10 minutes for extra flavor. Use a spotty ripe banana for natural sweetness. Stir the oats 2 hours after refrigerating for even texture. Store in the fridge for up to 5 days; do not freeze.
