These creamy peanut butter banana overnight oats are a quick and easy breakfast that tastes like dessert but is actually good for you. With just five minutes of prep, you’ll wake up to a rich, smooth, and satisfying meal that even oatmeal skeptics will love.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 large ripe banana (about 110g), mashed
  • 3 tablespoons (48g) creamy peanut butter
  • 1 cup (240ml) milk (any kind)
  • ¼ cup (60g) Greek yogurt
  • 1–2 tablespoons (15-30ml) maple syrup
  • 1 tablespoon (12g) chia seeds (optional)
  • ½ teaspoon vanilla extract
  • Pinch of salt
  • For serving (optional): sliced banana, drizzle of peanut butter, chopped peanuts, dark chocolate chips, drizzle of honey or maple syrup

Instructions

  1. Mash the banana: Peel the ripe banana and place it in a medium mixing bowl. Use a fork or potato masher to mash until smooth with just a few tiny lumps. Set aside half of the mashed banana for later.
  2. Mix the wet ingredients: To the bowl with the mashed banana, add peanut butter, milk, Greek yogurt, maple syrup, vanilla extract, and a pinch of salt. Whisk vigorously until the peanut butter is fully incorporated and the mixture is smooth (about 30 seconds).
  3. Add the dry ingredients: Pour in the rolled oats and chia seeds (if using). Stir until everything is evenly combined. The mixture will look liquid—this is normal.
  4. Divide into jars: Pour the mixture evenly into mason jars or airtight containers, leaving about ½ inch of space at the top for toppings.
  5. Refrigerate: Screw on the lids and refrigerate for at least 4 hours, but overnight (8-12 hours) is best.
  6. Add toppings before serving: In the morning, stir the oats. Top with sliced banana, a drizzle of peanut butter, chopped peanuts, and dark chocolate chips if desired. Serve cold or let sit at room temperature for 10 minutes.

Notes

For a prettier presentation, layer a spoonful of peanut butter in the bottom of the jar before adding the oat mixture, then swirl with a knife. These keep in the fridge for up to 5 days; flavors improve on days 2 and 3. If you prefer warm oats, microwave for 45-60 seconds. For a vegan version, use plant-based milk and yogurt, and maple syrup instead of honey.
