  • 1 scoop (about 30g) vanilla protein powder (whey or plant-based)
  • 1 tablespoon (12g) chia seeds (optional)
  • 1/2 teaspoon ground cinnamon
  • A tiny pinch of salt
  • 1 teaspoon maple syrup or honey (optional, for extra sweetness)
  • Toppings (optional): sliced banana, extra drizzle of peanut butter, sprinkle of cinnamon, chopped peanuts, or dark chocolate chips

Instructions

  1. Mash the banana in a small bowl with a fork until mostly smooth with a few small lumps.
  2. In a small saucepan, combine the rolled oats, milk, and mashed banana. Stir until the banana is evenly distributed.
  3. Add the ground cinnamon and a tiny pinch of salt. Stir again.
  4. Bring to a gentle simmer over medium heat, stirring occasionally, until small bubbles appear around the edges (about 3-4 minutes).
  5. Reduce heat to medium-low and cook for 3-4 minutes, stirring frequently, until the oats are thick and creamy but still have a little liquid visible.
  6. Remove the pot from the heat.
  7. In a small bowl, add the protein powder. Take about 2 tablespoons of the hot liquid from the oats (just the liquid, not the oats) and whisk it into the protein powder until smooth to create a paste.
  8. Stir the tempered protein mixture back into the pot with the oats. Stir vigorously for about 30 seconds until evenly combined and smooth.
  9. Add the creamy peanut butter and stir until fully melted and incorporated (about 20 seconds).
  10. If using, stir in the chia seeds.
  11. Taste and adjust sweetness with maple syrup or honey if desired.
  12. Let the oatmeal rest in the pot for 1 minute off the heat.
  13. Serve immediately in a bowl with desired toppings.
