A creamy, protein-packed overnight oats recipe with peanut butter, Greek yogurt, and protein powder. Perfect for hosting or a quick make-ahead breakfast that tastes like dessert but is actually good for you.

Ingredients

Scale
  • 1 cup (90g) rolled oats
  • 1 cup (240ml) milk of choice
  • ½ cup (120g) plain Greek yogurt
  • ¼ cup (60g) creamy peanut butter
  • 1 scoop (about 30g) vanilla or unflavored protein powder
  • 1–2 tablespoons (15-30ml) honey or maple syrup
  • 1 tablespoon (15g) chia seeds (optional)
  • 1 teaspoon (5ml) vanilla extract
  • Pinch of salt
  • For serving (optional): sliced banana, fresh berries, extra peanut butter drizzle, chopped peanuts, dark chocolate chips, dollop of Greek yogurt

Instructions

  1. In a medium bowl or large measuring cup, combine 1 cup milk, ½ cup Greek yogurt, ¼ cup creamy peanut butter, 1 scoop protein powder, 1 tablespoon maple syrup or honey, 1 teaspoon vanilla extract, and a tiny pinch of salt. Whisk until completely smooth.
  2. Pour in 1 cup rolled oats and 1 tablespoon chia seeds (if using). Stir until everything is evenly coated.
  3. Divide the mixture evenly into 4 jars or airtight containers, leaving about an inch of space at the top.
  4. Optional: Drop a small spoonful of peanut butter into each jar and gently swirl it through with a knife.
  5. Put the lids on tightly and refrigerate for at least 6 hours, preferably 8-12 hours.
  6. In the morning, stir the oats. Top with sliced banana, a drizzle of peanut butter, chopped peanuts, or chocolate chips. Serve cold or let sit at room temperature for 10 minutes.

Notes

For best texture, use rolled oats (not instant). Mix protein powder with liquid first to avoid clumps. Let oats sit for at least 6 hours, ideally 8-12. If too thick in the morning, stir in a splash of milk. Store in the refrigerator for up to 5 days. Do not freeze.
