A creamy, garlicky dip made by roasting garlic scapes and blending them with white beans for a smooth, flavorful party snack or everyday indulgence.

Ingredients

  • 1 cup garlic scapes, trimmed and chopped
  • 1.5 cups cooked or canned white beans (cannellini or navy beans), drained and rinsed
  • 3 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 2 garlic cloves, roasted
  • Salt to taste
  • ½ teaspoon freshly ground black pepper
  • Optional: 1 tablespoon fresh herbs (parsley or chives), chopped
  • Optional: pinch of red pepper flakes

Instructions

  1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Trim and chop about 1 cup of garlic scapes. Toss the scapes and 2 whole garlic cloves with 1 tablespoon olive oil, salt, and pepper. Spread evenly on the baking sheet.
  3. Roast for 15-20 minutes until scapes are tender and slightly browned and garlic is soft.
  4. Let the roasted scapes and garlic cool for about 5 minutes.
  5. In a food processor, combine roasted scapes and garlic cloves, 1.5 cups drained white beans, 2 tablespoons olive oil, 1 tablespoon lemon juice, and a pinch of salt and pepper.
  6. Blend until smooth and creamy, scraping down the sides as needed.
  7. Taste and adjust seasoning with more salt, pepper, or lemon juice. Add red pepper flakes if desired and pulse a few times.
  8. Optionally, fold in chopped fresh herbs.
  9. Serve immediately or chill for at least 30 minutes before serving.

Notes

If dip is too thick, add a splash of water or olive oil to loosen. Use scallion greens or mild roasted garlic as substitutes for garlic scapes. For extra creaminess, add tahini or plain vegan yogurt. Season a bit stronger if chilling before serving.
