A creamy, spicy buffalo chicken dip made effortlessly in a slow cooker, perfect for parties and game day snacks. This dip combines tender shredded chicken with a luscious blend of cream cheese, hot sauce, and cheeses for a crowd-pleasing treat.

Ingredients

Scale
  • 2 cups cooked and shredded chicken breasts or thighs (about 2 large breasts or 34 thighs)
  • 8 oz (225 g) cream cheese, softened
  • 1/2 cup (120 ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 1/2 cup (120 ml) ranch or blue cheese dressing
  • 1 cup (100 g) shredded cheddar cheese
  • 1/2 cup (50 g) shredded mozzarella cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Cook and shred the chicken: Poach 2 large chicken breasts or thighs in simmering water for 15-20 minutes until cooked through (internal temperature 165°F/74°C). Let cool slightly, then shred with two forks or pulse in a stand mixer on low for 30 seconds until tender and bite-sized.
  2. Mix the creamy base: In a medium bowl, combine softened cream cheese, buffalo hot sauce, ranch or blue cheese dressing, garlic powder, onion powder, salt, and pepper. Stir until smooth and well blended.
  3. Combine everything in slow cooker: Add shredded chicken and creamy mixture to the slow cooker. Stir well to coat the chicken evenly. Sprinkle shredded cheddar and mozzarella cheese on top without stirring.
  4. Cook low and slow: Cover and cook on low for 2 hours. Check at 1.5 hours and gently stir to mix melted cheese into the dip. The dip should be bubbly and creamy with a slight orange hue when done.
  5. Final stir and serve: Stir the dip to combine melted cheese evenly. Taste and adjust seasoning if needed. Serve warm with sliced veggies, crackers, or chips. Keep slow cooker on warm during serving to maintain melty consistency.

Notes

Softened cream cheese is key for smooth texture. Shred chicken finely for best sauce absorption. Cook on low for 2 hours to avoid separation and grainy texture. Layer cheese on top to melt beautifully. Prepare chicken and creamy mix ahead for convenience. Leftovers keep up to 3 days refrigerated; reheat gently.
