  • 2 pounds boneless, skinless chicken breasts
  • 8 ounces cream cheese, softened
  • 1 packet (about 1 ounce) ranch seasoning mix
  • 1 cup cooked and crispy bacon bits
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ cup chicken broth
  • Salt and pepper to taste

Instructions

  1. Place 2 pounds of boneless, skinless chicken breasts at the bottom of your slow cooker. Pat dry if needed.
  2. Sprinkle 1 packet of ranch seasoning mix evenly over the chicken. Add ½ cup of chicken broth.
  3. In a separate bowl, soften 8 ounces of cream cheese until easy to stir. Stir in 1 teaspoon garlic powder and 1 teaspoon onion powder.
  4. Spread the cream cheese mixture over the chicken in the slow cooker.
  5. Cover and cook on low for about 4 hours, or until chicken is fully cooked and tender (internal temperature 165°F).
  6. Shred the chicken directly in the slow cooker using two forks or a hand mixer.
  7. Add 1 cup cooked bacon bits and 1 cup shredded cheddar cheese. Stir gently until cheese melts and combined.
  8. Cover and cook for another 10-15 minutes on low to meld flavors and melt cheese.
  9. Taste and adjust seasoning with salt and pepper if needed. Serve hot.

Notes

Soften cream cheese before mixing to avoid clumps. Keep slow cooker lid closed during cooking to maintain heat. Use fresh chicken breasts for best results. For thicker sauce, remove lid near end and cook on high for 10-15 minutes or add a cornstarch slurry. Bacon is optional and can be substituted or omitted.
