  • 1/2 cup vodka or strawberry-flavored liqueur (adjust to taste, do not exceed)

Instructions

  1. Make the strawberry puree by blending 1 cup of fresh strawberries with 1/2 cup granulated sugar until smooth (about 2-3 minutes). Pour into a saucepan and warm over low heat for 5 minutes, stirring occasionally to dissolve sugar. Let cool slightly.
  2. Dissolve 3 tablespoons gelatin by sprinkling over 1/2 cup cold water and letting it bloom for 5 minutes. Add 1 cup boiling water and stir until completely dissolved with no lumps.
  3. Slowly whisk the dissolved gelatin into the warm strawberry puree. Add 1/2 cup vodka or strawberry liqueur and stir gently. Pour mixture into jello shot molds, filling halfway. Refrigerate for at least 2 hours until set but not fully firm.
  4. Prepare the creamy cheesecake layer by beating softened cream cheese with 1/2 cup sweetened condensed milk until smooth and fluffy (3-4 minutes). Add 1 teaspoon vanilla extract and 1/2 cup chilled heavy cream, whisk until light and slightly thickened.
  5. Bloom 1 tablespoon gelatin in 1/4 cup cold water for 5 minutes, then dissolve in 1/2 cup boiling water. Let cool slightly and fold into the cream cheese mixture.
  6. Carefully spoon or ladle the creamy cheesecake mixture over the set strawberry layer in each mold. Return to fridge and chill for 4-6 hours or overnight until fully set and firm.
  7. To serve, gently peel silicone molds away or pop shots out with a small spoon. Garnish with thin fresh strawberry slices or a sprinkle of crushed graham crackers.
