This recipe delivers perfectly crispy, juicy chicken thighs with a simple garlic herb rub, cooked quickly in the air fryer for a flavorful and fuss-free meal.

Ingredients

Scale
  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Zest of 1 lemon
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper
  • Optional: crushed red pepper flakes or onion powder

Instructions

  1. Pat 4 bone-in, skin-on chicken thighs dry with paper towels. (5 minutes)
  2. In a mixing bowl, combine 1 tablespoon olive oil, 1 teaspoon garlic powder, 1 teaspoon dried rosemary, 1 teaspoon dried thyme, 1 teaspoon paprika, the zest of one lemon, 1 teaspoon kosher salt, and ½ teaspoon freshly ground black pepper. Stir until well mixed. (3 minutes)
  3. Toss the chicken thighs in the herb rub until evenly coated, making sure the skin is well covered but not dripping in oil. (2 minutes)
  4. Preheat the air fryer to 400°F (200°C) and let it run empty for 5 minutes.
  5. Place the thighs skin-side down in a single layer in the air fryer basket. Avoid overcrowding. (1 minute)
  6. Air fry at 400°F (200°C) for 10 minutes. Flip the thighs skin-side up and cook for an additional 8-10 minutes, or until the internal temperature reaches 165°F (74°C). (18-20 minutes total)
  7. Let the chicken rest for 5 minutes before serving.

Notes

Pat chicken dry before seasoning to ensure crispiness. Preheat the air fryer for best results. Flip chicken halfway through cooking for even browning. If skin isn’t crispy enough, cook an additional 2-3 minutes while watching closely. Avoid overcrowding the basket to prevent steaming. Leftovers can be reheated in the air fryer at 350°F for 5-7 minutes to restore crispiness.
