A quick and easy grilled appetizer featuring spicy jalapeños stuffed with creamy cheese and wrapped in crispy bacon, perfect for parties and casual gatherings.

  • 12 medium fresh jalapeños, washed and halved lengthwise
  • 8 ounces cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • 12 thin-cut bacon strips
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika (optional)
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro or chives, finely chopped (optional, for garnish)

Instructions

  1. Wear gloves and slice each jalapeño in half lengthwise, removing seeds and membranes. Set aside.
  2. In a medium bowl, combine softened cream cheese, shredded cheddar, garlic powder, onion powder, smoked paprika, salt, and pepper. Mix until smooth.
  3. Fill each jalapeño half with the cheese mixture, packing gently but firmly.
  4. Wrap each stuffed jalapeño half with one slice of bacon, slightly overlapping the ends. Secure with a toothpick if needed.
  5. Preheat grill to medium heat (about 350°F / 175°C).
  6. Place bacon-wrapped jalapeños on the grill using a basket or skewers. Grill for 12-15 minutes, turning occasionally until bacon is golden and crispy and cheese is bubbling.
  7. Remove from grill and let rest for 5 minutes before serving.

Notes

Wear disposable gloves when handling jalapeños to avoid skin irritation. Use thin-cut bacon for even cooking. Control grill temperature to medium heat to prevent bacon from burning before cheese melts. Turn poppers frequently for even crisping. Can be baked at 400°F (200°C) for 20-25 minutes as an alternative. Assemble ahead and refrigerate up to 4 hours before grilling. Store leftovers in airtight container refrigerated up to 2 days; reheat in oven at 350°F for 10 minutes to crisp bacon.
