A quick and easy snack featuring jalapeños filled with creamy cheese, wrapped in crispy bacon, and served with a homemade creamy ranch dip. Perfect for parties or a comforting treat.

  • 8 fresh medium-sized jalapeños
  • 8 oz (225 g) full-fat softened cream cheese
  • 1 cup (100 g) shredded cheddar cheese (sharp or mild)
  • 8 slices thick-cut bacon
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Fresh parsley or chives, finely chopped (optional, for garnish)
  • For the creamy ranch dip:
  • ½ cup (120 ml) mayonnaise
  • ½ cup (120 ml) sour cream
  • 1 tsp dried dill
  • 1 clove garlic, minced
  • 1 tsp lemon juice
  • Salt and black pepper to taste

Instructions

  1. Preheat your oven to 400°F (205°C). Line a rimmed baking sheet with foil for easier cleanup. If you have a wire rack, place it on top of the baking sheet.
  2. Slice each jalapeño in half lengthwise and carefully remove the seeds and membranes with a spoon or small knife. (Wear gloves to avoid irritation.)
  3. In a medium bowl, combine softened cream cheese, shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Mix until well blended and creamy.
  4. Fill each jalapeño half generously with the cheese mixture using a spoon or piping bag.
  5. Cut bacon slices in half (or thirds if jalapeños are small). Wrap one bacon piece snugly around each filled jalapeño half, securing with a toothpick if needed.
  6. Place the wrapped poppers on the wire rack or directly on the foil-lined baking sheet. Bake for 20-25 minutes, turning halfway through with tongs for even crispiness. Bacon should be deeply browned and crispy.
  7. While baking, prepare the creamy ranch dip by mixing mayonnaise, sour cream, dried dill, minced garlic, lemon juice, salt, and pepper in a small bowl. Chill until ready to serve.
  8. Serve the poppers warm on a platter with the ranch dip on the side. Garnish with chopped parsley or chives if desired.

Notes

If bacon browns too fast, tent loosely with foil midway through baking. Chill filling briefly if it leaks. For milder poppers, remove all seeds and membranes. Thick-cut bacon crisps better without burning. Make ranch dip ahead to meld flavors but not too early to keep brightness. Reheat leftovers in oven at 350°F for 10 minutes to restore crispiness.
