  • 1/2 tsp salt
  • 1/2 cup (120ml) buffalo hot sauce (e.g., Frank’s RedHot)
  • 2 tbsp (28g) unsalted butter, melted
  • 1/2 cup (120ml) ranch dressing (store-bought or homemade)
  • Optional garnish: chopped fresh parsley or chives

Instructions

  1. Preheat the oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a medium bowl, whisk together flour, water, garlic powder, onion powder, paprika, and salt until smooth and slightly thick.
  3. Add cauliflower florets to the batter and stir gently to coat evenly.
  4. Spread coated florets in a single layer on the baking sheet, ensuring they are not touching.
  5. Bake for 20 minutes, flipping gently halfway through until golden and slightly crisp.
  6. While baking, melt butter and whisk into buffalo hot sauce until smooth.
  7. Transfer baked cauliflower to a large bowl, pour buffalo sauce over, and toss gently to coat.
  8. Return coated florets to the baking sheet and bake for another 10-15 minutes to caramelize the sauce and maximize crispiness.
  9. Let cool for a couple of minutes, then serve with creamy ranch dip and garnish with parsley or chives if desired.

Notes

Do not overcrowd the pan to avoid soggy bites. Flip halfway through baking for even crispiness. For extra crispiness, use a cooling rack or broil for 1-2 minutes watching carefully.
