  • 2 medium delicata squash
  • ¼ cup packed brown sugar
  • 3 tablespoons unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • ½ teaspoon fine sea salt
  • Optional: pinch of cayenne pepper or smoked paprika

Instructions

  1. Preheat your oven to 400°F (200°C). Place your cast iron skillet inside the oven while it preheats.
  2. Wash the delicata squash well. Trim off the very ends, then slice each squash crosswise into ½-inch thick rings. Use a spoon to scoop out the seeds and stringy bits from the center of each ring.
  3. In a small bowl, combine the packed brown sugar, ground cinnamon, and salt. Stir with a fork to break up any clumps. If using optional cayenne or smoked paprika, add it now.
  4. In a separate small bowl, melt your butter. Let it cool slightly.
  5. Add the brown sugar mixture to the melted butter and stir until you have a thick, grainy paste.
  6. Using a pastry brush or the back of a spoon, spread the brown sugar butter mixture onto both sides of each squash ring.
  7. Carefully remove the preheated skillet from the oven (use oven mitts!). Place the coated squash rings in a single layer in the hot skillet. They should sizzle when they hit the pan. Don’t overcrowd—if your skillet is small, work in batches.
  8. Roast for 12 minutes. The sugar will start to bubble and caramelize.
  9. After 12 minutes, remove the skillet and carefully flip each ring using a spatula. Return to the oven and roast for another 10-12 minutes, until the edges are deep golden brown and caramelized.
  10. Let the rings cool in the skillet for 2-3 minutes. Transfer to a serving platter and enjoy.

Notes

Don’t skip preheating the pan for crispy edges. Slice rings evenly (about ½-inch thick). Watch the sugar to prevent burning. Work in batches if needed. Use a metal spatula for flipping. Let rings rest a few minutes before serving.
