  • For the Blue Cheese Dip:
  • 1/2 cup (75 grams) blue cheese crumbles
  • 1/4 cup (60 grams) mayonnaise
  • 1/4 cup (60 grams) sour cream
  • 1 teaspoon lemon juice
  • 1/4 teaspoon garlic powder
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 450°F (230°C). Line a baking sheet with parchment paper or a silicone baking mat. If you have a wire rack, place it on the sheet for better airflow and crispiness.
  2. In a large bowl, whisk together all-purpose flour, water, garlic powder, paprika, salt, and black pepper until smooth and slightly thick like pancake batter. Adjust consistency with more water or flour if needed.
  3. Add the cauliflower florets to the batter and stir gently to coat each piece evenly. Let sit for 5 minutes to ensure good coating.
  4. Arrange the coated cauliflower in a single layer on the wire rack or baking sheet, leaving space between pieces to avoid sogginess.

  6. While baking, melt the butter and stir in the buffalo hot sauce until smooth. Set aside.
